Wine Tasting - Concrete has Arrived
Exploring ways to age wine £75pp
Mhairi and I got a bit carried away with this title but anyone who has tasted with me will know I have a slight obsession with concrete! Wine has many extraordinary moments and over my thirty years in wine I have had the privilege of experiencing many magical wine moments. One standout moment has to be tasting with Jose Maria Fraile from Bodega Tandem. When I asked him, over ten years ago, why his wines had such a beautiful silky finesse to them, he told me this was due to concrete – I pulled the face that I have seen many of you pull and ever since, my quest began to understand more! It seems Jose was ahead of the curve and many wineries are following suit.
However, this tasting is not just about concrete, although I could happily do that! It is about all the various ways to age wine, not to age wine and, how they are all different - the fun thing with wine is that we can taste the difference!
I am very excited to do this tasting and to explore ageing wine and the various different ways that can be done: stainless steel, with lees, oak in its many guises – we will look at the extremes of French and American oak, solera system - oxidative, reds in stainless steel with whole bunch, natural, amphora and in the bottle. Not only will we taste a lot of stunning, delicious wines - we will learn a lot.

Wine Tasting - Mediterranean Wines
Islands and Sunshine £65pp
Coming into June and starting to think about summer holidays, it seemed a good time to indulge into the ‘Mediterranean’ and the stunning wines that exist that some you may have heard of and not have tried, as well as some new wines to learn about. One consistent theme is that the varied topography and often ancient soils curate truly delicious drinkable interesting wines that do not kill the bank balance and are full of a wealth of history, intrigue and fascinating stories.
Wine has always been part of life, culture, and cuisine for thousands of years in the mediterranean, long life too! We will taste wines from the windswept vineyards of Provence to the volcanic islands of Sicily, limestone hills of Greece and terraced slopes of Slovenia.
We will cruise around the Mediterranean – Miraval has a white wine, not just Rose from Brad Pitt! Lebanon but white? Sauvignon Vert - a delicious wine from the icon that is Marjan Simcic in Slovenia on the border of Italy, the vineyards in Italy and the winery in Slovenia!
Some of my favourite wines and such great value for money…Plakota from Cyprus – Bordeaux in a glass without the price tag. Malagousia, a wine everyone needs to know about, as is Grimalda from Croatia - one of Mhairi’s all-time favourites.
What is better than to know more about the wines before going to relax in that beautiful Mediterranean sunshine…

Wine Tasting - Australia
Making an impact from down under £75pp
Australia began making wine over two centuries ago and is a vast country rich in old vines, multi-generational winemaking families, and an ingrained knowledge and respect for the craft. With a new generation of winemakers comes a yearning to explore and innovate, a fearless attitude, and a diverse patchwork of wine regions across many climates—the ingredients of an extraordinary wine country like no other.
Since the 1980s, when Australia burst onto the scene, creating a dramatic shift in the market, it has continued to break boundaries. In my tasting, we will look beyond the traditional and explore wines that define elegance, terroir, minimal intervention, and a deep respect for both land and place. Forgotten varietals, cool-climate regions, and a lighter touch in the vineyard and cellar define Australian wines. This diversity is exciting and refreshing, showcasing a regional offering that has always existed and continues to evolve dramatically.
Will, my amazing business partner—whose knowledge and passion for all things Australia, especially wine, is encyclopaedic—has helped me curate this fantastic tasting. We have wines from Giant Steps, Cullen, legends like Larry Cherubino and SC Pannell, among many others. We will try Chardonnays and Pinot Noirs side by side to compare their regional characteristics. Larry’s latest Chardonnay, in which he blends ancient techniques with modern winemaking, is modeled on Roman amphora—outstanding!

The future of Spain’s wines lies in its roots: indigenous varieties and traditional practices are being rediscovered and re-championed by a new generation of winemakers. As the country with the largest area of vineyards in the world and the third-largest wine producer, Spain is shifting away from well-known wines such as Rioja, which accounts for around 40% of its wine exports. For those willing to look beyond Rioja, a world of exciting indigenous Spanish wines awaits, spanning 146 official wine regions and many unclassified rural producers.
I have poured over these wine regions and curated more than ten wines that I feel reflect the excitement of Spain’s wine revolution. We can discuss many more regions—or anything else about Spain that piques your interest!

The USA ranks fourth in terms of worldwide wine production, with a shorter history than its European counterparts, and has many icons in the world of wine.
Iconic people such as Thomas Volney Munson and his hybrid rootstock conquered the devastation of Phylloxera in the nineteenth century. Iconic wines made from Chardonnay, Pinot Noir, and Cabernet Sauvignons that stay rooted in one's memories for their deliciousness.
Iconic wine regions such as the beautiful fairytale Napa Valley, among other stunning wine regions. In this new and exciting era there are outstanding wines from the younger generations of winemakers, maintaining the USA’s visionary leading profile.
