Exploring ways to age wine £75pp
Mhairi and I got a bit carried away with this title but anyone who has tasted with me will know I have a slight obsession with concrete! Wine has many extraordinary moments and over my thirty years in wine I have had the privilege of experiencing many magical wine moments. One standout moment has to be tasting with Jose Maria Fraile from Bodega Tandem. When I asked him, over ten years ago, why his wines had such a beautiful silky finesse to them, he told me this was due to concrete – I pulled the face that I have seen many of you pull and ever since, my quest began to understand more! It seems Jose was ahead of the curve and many wineries are following suit.
However, this tasting is not just about concrete, although I could happily do that! It is about all the various ways to age wine, not to age wine and, how they are all different - the fun thing with wine is that we can taste the difference!
I am very excited to do this tasting and to explore ageing wine and the various different ways that can be done: stainless steel, with lees, oak in its many guises – we will look at the extremes of French and American oak, solera system - oxidative, reds in stainless steel with whole bunch, natural, amphora and in the bottle. Not only will we taste a lot of stunning, delicious wines - we will learn a lot.
